It’s just like mashed potatoes....but healthier
One large head of cauliflower
½ cup 0% Greek Yogurt
1 tbsp Himalayan salt
1 tbsp fresh pepper
1 tbsp dried parsley
In a large pot, boil 8 cups of water.
Trim the stems and leaves off of the cauliflower.
Place the cauliflower in the pot and bring to a boil.
Boil for 10-15 minutes until the cauliflower is soft enough to pierce easily with a fork.
Drain all the water from the pot.
Add greek yogurt, salt, pepper and spices and blend with a hand-held blender directly in the pot, or move contents into a blender or food processor.
Blend until smooth and creamy
Enjoy as a perfect side dish.
