Chia Pudding

Did you know that chia seeds contain 28 grams of fiber per oz?
If you coach with me or if you know about prebiotics and probiotics, you know that fibre and omega 3 fatty acids help feed the good bacteria in our gut promoting gut health magic!!!
When you consume fibre rich foods, like chia seeds, make sure you are drinking enough water to keep the bowels moving.
I only recommend eating chia seeds after they have been soaked in water or a liquid. This allows the seed to form a gut friendly jelly which gives it a pudding consistency. At the same time, soaking seeds changes the nutritional structure of the seed, making this food easier to digest.

Ingredients:
2 tbsp chia seeds
1/2 cup non dairy milk - like coconut milk or almond milk
1 tsp cinnamon
sprinkle of organic stevia
handful of berries
Optional: top with walnuts, sliced almonds or a handful of nuts of your choice
Preparation:
Combine the non dairy milk and the chia seeds in a small container and let sit overnight in the fridge.
The following morning, stir the seeds up, add the stevia and cinnamon, and stir again.
Sprinkle with nuts and berries.
Enjoy!
