I prepared these delightful treats, and they turned out incredibly delicious. What's even better is that they contain no flour or white sugar, only wholesome, all-natural ingredients.
For optimal results, it's essential to mix the wet ingredients separately from the dry ones and then combine them together.
2 cups oats
1/2 cup almond flour and 1/2 cup coconut flour (mixed)
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp allspice
3 ripe bananas, mashed (you can use frozen and thawed bananas)
3/4 cup almond milk
1/3 cup olive oil
1 tsp vanilla extract
3/4 cup stevia-sweetened chocolate chips or dark chocolate chips
1/2 cup raisins
Preheat the Oven: Preheat your oven to 400°F (200°C). Prepare your muffin tin by greasing it or using silicone muffin tins for easy removal.
Mix Dry Ingredients: In a large mixing bowl, combine the oats, almond flour, coconut flour mixture, baking powder, baking soda, salt, cinnamon, and allspice. Ensure they are well mixed.
Combine Wet Ingredients: In a separate bowl, mash the ripe bananas until smooth. Add the egg, almond milk, olive oil, and vanilla extract to the mashed bananas. Mix until all the wet ingredients are fully combined.
Combine Wet and Dry Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the two mixtures together until just combined. Be careful not to overmix; it's okay if there are a few lumps.
Optional Additions: If desired, fold in the stevia-sweetened chocolate chips or dark chocolate chips along with the raisins to add a delightful sweetness and texture.
Fill Muffin Cups: Scoop the muffin batter into your prepared muffin tin, filling each cup about two-thirds full.
Bake: Place the muffin tin in the preheated oven and bake for approximately 20 minutes, or until the muffins have risen, turned golden brown, and a toothpick inserted into the center comes out clean.
Cool and Enjoy: Remove the muffins from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely. Once cooled, enjoy these delicious and nutritious oat banana muffins.
