Tomato Basil Sausage

Ingredients:
1 onion
1 clove garlic
1 tbsp coconut oil
5 carrots
1 head of broccoli
1 handful fresh basil
5-6 lean sausages
1 cup chicken stock
1 cup tomato sauce
1 cup frozen peas and corn
2 cups fresh spinach
Sauté one chopped onion and garlic and some coconut oil in a large deep pan or a Dutch-oven For 5-7 mins.
Chop 5 carrots and one head of broccoli and add to the pan with 1 cup of chicken stock to the pan and put the lid on and cook for 10 mins.
Add 5 chopped sausages and a handful of chopped fresh basil along with 1/2 can of tomato sauce with cup peas and corn.
Cover and let simmer on med/low heat for 20-25 mins. Serve on a bed of fresh spinach :)
