Oven Roasted Chicken Thighs


...a classic and simple source of protein for your healthy meals

Personally, I like chicken thighs because I find white meat to be dry and bland if not cooked perfectly. I have always enjoyed the dark meat and its moist flavor.

Ingredients:

One package of 6-8 boneless/skinless chicken thighs

2-3 tbsp Quick and Simple Seasoning Blend or Herbamare or any chicken seasoning mix

¼ cup dried fresh thyme

Preparation:

  1. Oil a small baking pan with 1 tbsp coconut oil or olive oil cooking spray and set the oven at 400 degrees.

  2. Place chicken thighs in baking pan and sprinkling each piece of meat with the seasoning blend.

  3. Sprinkle chicken thighs with dried or fresh thyme. If you're using fresh thyme, make sure you are removing the stems.

  4. Cover the baking pan with tin foil, shiny side down, but leave a small corner uncovered for steam to escape.

  5. Bake for 25-30 minutes.

  6. Let cool and serve with vegetables and a healthy complex carbohydrate like brown rice.
