Slow Cooker Chili
Introduction:
This slow cooker chili is a hearty and delicious meal that's perfect for busy days. You can prepare it overnight, and it'll be ready to enjoy the next day. Packed with lean ground meat, vegetables, and a flavorful seasoning blend, it's a nutritious and satisfying dish.
Ingredients:
1 sweet onion, finely chopped
2 cloves garlic, finely chopped
2 lbs lean ground meat (chicken, turkey, beef, or pork)
2-4 tbsp Quick and Simple Seasoning Blend or your choice of meat seasoning (e.g., Mrs. Dash, salt, pepper, steak spice, or chicken spice)
3 large carrots, finely chopped
3 celery stalks, finely chopped into 1/2-inch pieces
1 cup green beans, cut into 1-inch pieces
6 cups low-sugar tomato sauce
2 cans of three-bean medley, rinsed
2 cups cooked organic corn
Optional: 1 cup chopped kale
Optional: 1 cup chopped zucchini
Optional: 1 cup chopped mushrooms
Instructions (Slow Cooker):
Prepare Vegetables:
Finely chop the sweet onion, garlic, carrots, celery, and green beans.
Rinse Canned Beans:
Rinse the canned bean medley in a colander.
Combine Ingredients:
Place all the ingredients in the slow cooker, including the vegetables, lean ground meat, seasoning blend, low-sugar tomato sauce, canned bean medley, and cooked organic corn.
Optional: Add chopped kale, zucchini, and mushrooms if desired.
Cook Slowly:
Set the slow cooker to low and cook for 7 hours.
Stir occasionally during the first 2 hours to break up the ground meat.
Instructions (Stove Top):
Prepare Vegetables:
Finely chop the sweet onion and garlic.
Sauté Onion and Garlic:
In a large pot, sauté the sweet onion and garlic in 2 tbsp coconut oil for 4 minutes.
Cook Ground Meat:
Stir in the lean ground meat and add 2 tbsp of Quick and Simple Seasoning Blend or your preferred meat seasoning.
Brown the meat for 10 minutes.
Add Vegetables:
Chop celery, carrots, and green beans.
Optional: Add chopped kale, zucchini, and mushrooms to the meat mixture.
Stir and cook for 5 minutes.
Rinse Canned Beans:
Rinse the canned bean medley in a colander.
Combine Ingredients:
Add low-sugar tomato sauce and canned bean medley to the pot.
Mix all the ingredients with a large spoon.
Simmer and Serve:
Let the sauce simmer on medium heat for 60-90 minutes, allowing all the flavors to meld together.
