Sweet Potato Medley

A Colorful and Flavorful Side Dish


Roasted vegetables are a delightful addition to any meal, and this improved recipe will elevate your dining experience with its burst of colors and flavors. Here's how to make it even better:


Ingredients:

  • 3 large sweet potatoes

  • 2 red onions, peeled and chopped

  • 4-5 large carrots, sliced into 1/2-inch pieces (approximately 2-3 cups)

  • 1 green pepper

  • 1-2 tbsp sea salt

  • 1/2 tbsp pepper

  • 2 tbsp olive oil

Optional Additions:

  • 2 tbsp Quick and Simple Seasoning Blend

  • 1 cup chopped asparagus

  • 1 small white potato

Preparation:

  1. Begin by chopping the sweet potatoes, carrots, onions, peppers, and any additional vegetables into thick one-inch pieces.

  2. Coat the vegetables evenly with olive oil and place them into a large baking pan.

  3. Sprinkle the sea salt, pepper, and any optional seasoning blend on top of the vegetables. Stir the mixture to ensure the seasonings are evenly distributed.

  4. Position the baking pan on the top rack of the oven and set it to broil at 400 degrees Fahrenheit for 15 minutes.

  5. After the initial 15 minutes, carefully remove the vegetables from the oven and turn them to ensure that the bottom vegetables are now on top.

  6. Continue to bake for another 15 minutes or until the vegetables achieve a golden brown color.

  7. Allow the roasted vegetables to cool slightly before serving.

  8. This recipe pairs wonderfully with a side of plain Greek yogurt for dipping the vegetables into.
